Vegetable Semolina Porridge

Semolina porridge, topped with a selection of tasty greens.

Ingredients

Quantity Ingredient
25 grams unsalted butter
3 cloves garlic
1 large zucchini
100 grams peas
1 tsp lemon zest
1tsp oregano
300 ml milk
90 grams semolina
50 grams hard cheese eg. pecorino

Method

  1. In a pan on medium-high heat, fry together
    • 25 grams butter
    • 3 crushed cloves of garlic
    • one zucchini, cut into thin slices.
    • 1/2 teaspoon of salt,
    • add pepper
  2. continue to fry until zucchini is soft.
  3. Reduce head to low and continue to cook for 5 minutes
  4. Stir in peas and warm through for 1 minute.
  5. Remove from heat.
  6. Stir in 1 tsp oregano and 1 tsp lemon zest.
  7. In a medium sauce pan on medium high heat, bring the following to boil:
    • 300 ml milk
    • 300 ml water
    • pinch salt
    • pinch pepper
  8. Add 90 grams semolina, whisking continuously for 3-4 minutes until smooth and thick like porridge.
  9. Remove from heat and stir in 40 grams hard cheese.
  10. To serve, divide semolina mixture into bowls, top with vegetables remaining hard cheese and a drizzle of olive oil.
