Scones

Soft, basic breakfast or afternoon tea scone, best served with jam and whipped cream.

Ingredients

Quantity Ingredient
350 g all purpose/plain flour
12 g baking powder
1/4 tsp salt
85 g melted butter
175 ml warm milk/soy milk
1 tsp vanilla extract
1/2 tbsp lemon juice

Method

  1. Preheat oven to 220c
  2. Mix flour, salt and baking powder in a bowl
  3. Add melted butter, mix in with fingers
  4. Warm the milk, and add to it vanilla extract and lemon juice
  5. Add liquid to dry mix, and combine with a knife.
  6. Fold mix 2 -3 times on a floured surface.
  7. Shape into a cirlce about 3 - 4 cm high
  8. Cut into 8 wedges with a floured knife
  9. Add to baking tray
  10. Cook in oven for 14 minutes
