Lemon Twist Biscuits

A plain dunkable biscuit with a firm bite and a hint of lemon.

Ingredients

Quantity Ingredient
90 grams butter
1/2 cup caster sugar
2 eggs
2 tsp lemon rind
1 1/2 cups plain flour

Method

  1. With electric beater, beat butter until smooth
  2. Add 1/2 cup of sugar and beat until combined
  3. Add 1 whole egg and 1 egg yolk (keep egg white for glaze) and beat together
  4. Stir in 2 tsp lemon rind and 1 1/2 cups of plain flour until just combined
  5. Form dough into ball and rest for at least an hour.
  6. Divide dough into 32 equal pieces.
  7. Roll each peice into 12 cm long rope, and shape into a twist, by bending in the middle and twisting the ends around eachother.
  8. place twists on a baking tray
  9. Brush with egg white.
  10. bake for 10 to 12 minutes at 160 degrees C.
