Lemon Twist Biscuits
A plain dunkable biscuit with a firm bite and a hint of lemon.

90 grams | butter |
1/2 cup | caster sugar |
2 | eggs |
2 tsp | lemon rind |
1 1/2 cups | plain flour |
Method
- With electric beater, beat butter until smooth
- Add 1/2 cup of sugar and beat until combined
- Add 1 whole egg and 1 egg yolk (keep egg white for glaze) and beat together
- Stir in 2 tsp lemon rind and 1 1/2 cups of plain flour until just combined
- Form dough into ball and rest for at least an hour.
- Divide dough into 32 equal pieces.
- Roll each peice into 12 cm long rope, and shape into a twist, by bending in the middle and twisting the ends around eachother.
- place twists on a baking tray
- Brush with egg white.
- bake for 10 to 12 minutes at 160 degrees C.
